You can start with one use case of AI. For example, AI for teachers, AI for startups, coding with AI, etc.

You can also start a blog that targets one group and caters to their needs. For example, dog training for new dog owners, health tips for pregnant women, natural remedies for skin issues, etc.

As far as youtube is concerned, there are many growing niches. If you can be effortlessly funny or can engage people in conversations, you should start a channel in entertainment niches. Tech and business niches are saturated. Vlogs are difficult to get subs but can have loyal subscriber base. Everything depends on your interests and experience.

You should start with a micro niche relevant with your passion. (lots of resources will get on BHW forum)
Start writing your content on long tail keywords that have search volume.
Don't try to be 100% perfect on starting, let it get started first and gradually be perfect.
