I came across a family guy video but when the video atuoplays on the thumbnail or you just scrub through the video, it's a completely different video. I have never seen this before so I'm not sure if this is a youtube glitch or another exploit they've found to upload full copyright content.

These kind of tricks will be patched by YouTube quick. You cannot make money with these tricks for very long. Better approach is going long term with own original content.
they uploading a minecraft video and after that edits video adds family guy and changes title and thumbnail

I think the other guys might be correct but I'm not 100%, couldn't this be due to some video/thumbnail cache perhaps?

They sacrifice an aged legit youtube channel for one or two strikes then take down all copyrighted videos , then wait for ytb payment to get into adsense balance , then continue on other channels , while waiting for the previous ones for their strike period to end and so on .. it actually works and worth it but not for eveyone .
