[New website setup] www or without www ?

Totally upto you imho. Both should be fine, but make sure both are not available at the same time (e.g. redirect non www to www, or vice e versa, or add canonical tag in one of the version).
I personally prefer the non www version because it makes the domain name look shorter. I know many who would do the exact opposite though.

all my domains without www. if you have a long domain use without www. rest up to you

I think most modern browsers hide the 'www' anyway to keep a clean interface. It's up to you and either way is fine, but I believe the preferred way these days is to drop the 'www'.
