Check the permissions of the settings file for the custom options or the folder of the file.
Make sure it's writable.

Done already, everything chmodded to 777(wp-content - themes - themename - includes - themeoptions.php) - no good.

if chmoding files & folders didn't help, you may have to use a different ftp program to upload your theme/wordpress files. Some ftp programs can break working scripts do to insertion of blank characters causing scripts to break when there is nothing wrong with the code itself or the code is updating a wrong file.

filezilla is a good free ftp client to use. If this invis character is apparent in the original files, re-uploading won't solve your problem.

Which theme are you using? I remember there was a theme that had this kind of bug, not sure which it was

As Blackhit said, try changing permission to 666.
