So I have a website that is ranking well on Google.co.uk, but I also want it to rank well on Google.ie. Trouble is, its nowhere to be seen on google.ie. Any advice on how to boost rankings for multiple googles at the same time?

Build links on .ie websites obviously.

Find a couple of do-follow sites and get your links in them. If the keyword doesn't have much competition on google.ie you'll rank in no time.

Submit your site in Google.ie and in webmaster check your search engine priority. If it is only UK then make it .ie too.

Thats not the solution when someone is targeting multiple country google ranking. If he does that, he will be focusing on only one country and might loose his google.co.uk ranking.

There are several ways you can do that but you need to be more specific about your problem. The 2 most contributing factor for local ranking is country specific TLD and Country specific hosting ip, having them is a added bonus but not having them doesn't mean you wont rank. Now, since ireland is a English speaking site, so you dont have to work on any other factors, Just try to increase your site's authority and google trust, Try to get country specific quality relevant backlinks and lastly you have to hold your patience to see results. If your site's authority is high enough with google trust, then it would show up in all google searches(Specially the english speaking country searches).

Is the x.ie domain available for your x.co.uk site? If so, that's a start.

Looks like you need to increase google trust a little more and maybe set up backlinks at some major irish share sites. I am sure if you have a group of irish users talking about your site, your link will appear on google.ie in no time.
