You can try N numbers of niches. But you have to check the topic velocity! I mean, how many topics you can cover in future? If it has the scope of growing then It's good to go. Like, RV is a very good niche to go. You could target amazon products as well as other affiliates too.

I suggest you get into a niche that interests you and you know something about. That way it will not be a pain for you to dedicate it your time and money, because it already interests you and you will be doing it with a joy.

Avoid trending markets better go for a tiny niche in one of the evergreenmarkets which will never go out of fashion like health, wealth and relationships. Even the niche is small there will be demand and more space to grow into a related niche in the same market. Also many options to monetize with good paying affprograms as well.

You write that you would like to try your luck in the health niche. This is a very profitable niche and from my own experience I know that you can make good money here, but it is best to choose some narrower focus already inside the niche in order to stand out from the rest (competitors) and, plus, so that you will be noticed by exactly those future customers who need narrow-sale products or services.
