Need advice on content strategy and website structure

I am building an affiliate marketing website for various niches. My content plan is structured as follows: I will categorize products into different groups, but for each group, I will select only one high-quality product to promote to customers. Each product will be associated with a specific category, and within each category, there will be multiple articles linking to the corresponding product. I have illustrated this plan in the diagram below.

In your opinion, is this a feasible strategy? Do you have any suggestions for improvements?

Does that mean I can only choose 1 niche that I do best? ? ?

focusing on 1 niche will increase your chances to rank for sure. And yeah, it's best that you stick with the niche you know and like more

you don't expand! You're not Amazon to rank on every topic, you're a starter with a site that google doesn't yet know, like or trust, so it's best to win their trust by following their retarded guidelines (topicality, authority, quality, trust, all that crap that google preaches but never believes in when their main focus all the time is money, money, and even more money... for them of course)

This looks overly complicated. What's the benefit of putting in an extra click to get to the affiliate link if every travel page is going to the same place? To appear less spammy rather than having a bunch of pages all linking to the same offer?

It's possible to run a multi-niche site but hard to do it well, especially if you're testing out a structure you're unsure of. If it doesn't rank well you'll always have the question of whether or not the lack of focus is impacting results.
