I was operating domain with rwt for a small online game for 7 years, today got Cease and Desist letter from them.
They "kindly" asks me to shutdown my domain, and stop operating rwt activity
They have registered TradeMark like Gnome
My website name like GnomeTools

I have 2 questions:
1) If I change domain name to GnomTools can they sue me for a TM, or I better to change it to something like GnmTools?
2) Can they sue me if I am only operate website?
Users of my website do all of the realworldtrading activity in Game by my Terms(similar websites g2g.com, playerauctions.com, funpay.com)
I am like operator connecting users who want to purchase and who want to sell something
Delivery of goods provided by Third party by my Terms.

That is true, but it's a bit more complex than that.

It also depends on the fact that when you sign up for the Domain, you interact with their Nizza Classes in your Trademark.
Even though there are so many factors, I would consult an IP/TM lawyer.

You have no bad intention for Domain Skimming; No bad faith, And most likely, your Domain was regged before them.
So dont let them pressure you; stay calm, consult a Lawyer, and ask for quick advice.

They will put more and more pressure, but dont get distracted.
In the end, most likely, they will try to buy the Domain, and then it's negotiation time.
