Need advice about blog structure

Hey guys.
I have a site and i need to add blog to it.

Can u advice me how to do that corectly?

I'm thinking of renaming the "Uncategorized" category to blog and adding sub categories to it.

Or, creating wp page called blog, setting it as posts page and then creating categories.

Does it really matter?

Easiest way is a subdomain then link to it in your menu, you can change uncategorized but then it'll show up on the front end, if you want to keep them separate, a sub domain called blog or articles is easy way to separate the two.
Shouldn't this be in blogging?
 
I would go with categories and posts, instead of pages, it would be easier to manage your all subcategories and posts.
