I bought a domain on Godaddy and a host on Hostgator.
I replaced the Godaddy's nameservers with the Hostgator ones.

Site still not online, Hostgator says that I have to wait at least 24h because of DNS propagation.

Why is that? I used to do the same with iPage and my site was online within a few minutes.

Different hosts, different servers, usually from purchase to pointing at my hosting the become live in minutes. Occasionally it can be your ISP.

Sometimes it take from 0-72 hrs for DNS propagation. So just chill. The moment you find the pointed NS in whois check then you can access your site using the domain name.

Some times it can take up to 48 hours,

For me longest was about 48 hours and shortest 30 min, it depends on how fast DNS update their self and they have to be update all over the world

That's not cool..I never had to worry about this with iPage, so should I go back with them?

Or any other host that doesn't do this propagation?

OP, just give it a little time.
Sometimes it can be immediate and other times it can take 24-48 hours.
I know it is frustrating but it isn't anything to worry about.

They ALL operate this way, it depends how long the servers take to get updated.
Try these
https://www.whatsmydns.net/
http://viewdns.info/propagation/
http://www.nexcess.net/resources/tools/global-dns-checker/
http://checkdnspropagation.com/
http://www.preshweb.co.uk/cgi-bin/dns-propagation-tracker.pl
http://dnspropagationcheck.com/
http://propagatedyet.com/

It takes time time, so you should probably wait. :) Some hosts update DNS faster than others, but it doesn't measure their quality. :p
I don't use any websites to check if the DNS is updated or not, I just use ping command and it has always worked fine for me.

OP , if you just want to start setting up your website , you can edit host file on your computer to map your servers ip address to your domain ..

You won't and only you will not have to wait for the DNS to propagate

This is becoming kinda frustrating..

I bought a .IT domain and changed the nameservers from GoDaddy, they are still saying 'Pending Update'.
And they said it could take up to 7 freaking days!!!

Is there anything than I can do next time? It's frustrating waiting all this time.
