It may be tough but you can always outrank them if you can focus upon better quality links compared to theirs, and also, better onpage.
 
What type of seo. For Google or for Amazon?
For Google that's possible but I don't think its that common.

I mean that a particular merchant on sites like Amazon, NewEgg, eBay, etsy, etc... will often do SEO work for their particular product pages to increase rankings in Google. So while Amazon might rank for many keywords simply because their domain is so powerful, they might also really rank for particular keywords because individual merchants have created backlinks to certain pages. Really, it's obvious, but also sometimes a facet of larger sites that gets omitted from discussion.

For instance, when auditing a keyword to determine whether or not it would be a good investment to target—one might notice an etsy page ranking in the top 10. Now, etsy maaay be in the top 10 because they have the product you're searching for, a powerful domain, and there isn't much other competition. On the other hand, they may be in the top 10 because they have the product, there is competition, but the seller has created a powerful backlink profile to their product page and ranked that page above the other competition.

Circumstances such as these are where it pays to evaluate EACH ranking page in a SERP you're targeting, and not rely on broad strokes of algorithmic analysis such as Long Tail Pro and etc. beyond general qualification.
 
I've been there and done that. I would never do it again. Fight battles you can win. If you insist on doing it anyways, load up on extremely high quality editorial links.

Agree, there are so many lucrative niches out there why waste time and money on something that is going to be such an uphill battle. A notable exception would be Brand Management and combating negative press. Then you have to work with the hand you're dealt.

pointless question without exact figures but I wouldn't be interested in anyones opinion who's said to rank it when they've not even any idea if its worth $100 or $10,000, they've also no idea who the big sites are, no idea how many/how powerful the links they're building to the page are, no idea how good their on site seo is.
Its not about whether you can outrank them or not, you can probably can. Its if it will be profitable/worth your time
