What do you mean by 'more tags'? What meta tags are we talking about here?

The basic ones are title and meta description. Those are essential. There are a load of others that you can use, but I've yet to see evidence to suggest that using a load of other meta tags has a positive impact on your overall SEO.

I almost feel as though you're confusing meta tags with just the meta keywords tag and are asking whether cramming multiple keywords in the meta keywords tag is a good idea (it's not). I could be mistaken.

Meta Title and Meta Description are the tags that are important for SEO. Optimized title and description should be your first steps of On-Page optimization. While a relevant title can directly act as a ranking factor, meta description is more useful to the potential visitor and help in click through. Only 1 each of title and description is required per page plus og: title and og:description for social media.
Meta Keywords worked until a few years back, but now they are almost useless. You can add a few keywords in there, but it won't help a bit thanks to people who misused it a few years back to such an extend that google decided to make it completely useless in the later algorithm updates.
And if you are talking about adding tags while posting a blog in wordpress, it's not related to SEO, but will help users navigating your blog.

More meta tags? Technically, you can make whatever arbitrary custom meta tags you want, meaning that you can have an unlimited number of meta tags. So, no, more isn't inherently better.

Really, the only one that's a must for SEO is the description tag. Noindex is contextually useful. Language and charset may have mild impacts on SEO.

The 'keywords' meta tag hasn't actually done anything for SEO for a while now. For reference, I've copy-pasted a keyword meta tag that I used in a campaign back when that still had an impact on SEO:
