So, let's say Bayern vs Chelsea just finished a match now, then I use:
Bayern Vs Chelsea Highlight as my title, but instead of the real match, I use either PES or FIFA gameplay. Would my channel be considered for monetization?

You need to put the highlights and the gameplay too. Because your video will get more shares and views if the highlights are in it. After some hours use YouTube studio to cut the highlights part and leave only the gameplay so ur videos will stay on ur channel so u wont lose watched mins and monetization
