Making beef jerky

In my country there is no beef jerky to buy :/ has anyone been able to make good jerky in home?

I bought a dehydrator and tried several recipes but the results are quite hard and chewy compared to commercial ones (my hope is to clone jed's normal jerky or zicks branded one)

I think he wants a method from someone he trusts. Because he knows that most recipes sites are just a load of bull BHW members put together to boost their Adsense earnings. I also want to try this because jerky in Aus only comes in one brand and it's horrible.
 
mmmmm, love beef jerky :D but yeah you can't get a good one just anywhere. I think the problem you will have is that the really good recipes are quite private and kept secret and what's online are just what other people are trying, some may be ok some may not..

:/ yeah I have already tried several ones (right now I am testing recipe 11 :D ) but if anyone had like a very good proven one, that would help a lot.
 
In Southeast Asia - Thailand, Cambodia, and Laos - they have what is called "one sun meat". It's a lot like jerky, though probably isn't quite dry enough to last forever like jerky does. But it would hang around for quite a few days if you don't eat it all at once.

1) Marinate finger-sized pieces of beef in a mixture of fish sauce and/or soy sauce, garlic, crushed peppers, and crushed cilantro seed overnight.

2) Lay it out in the sun for a day. Best if it's on a rack, and turn it at mid-day. I use a fish-net to keep the birds away.

3) Deep fry it for no more than about 15 seconds.

Have you tried it before deep frying? because the drying process look quite common except this. Maybe is for hygienic reasons?

In my country is very common and cheap the unmarinated jerky, from horse usually, very very dry. Quite gross. Nothing compared to the other one :/

I have made, but nothing amazing :/ (too much pepper, too spicy, I don't know how the commercial brand gets something that tastes nice, is not so hard and not overloaded with spices)

Just stick a donner kebab in the microwave for two hours, that should do the trick.

marinate the meat in coca cola before you dehydrate it, also try to pound it with a mallet before marinating in coke for 24 hours in your fridge.

What do you add after that? (no soy? have you tried that?)

Yeah, call me nervous. I've eaten plenty of raw meat, but when I've been messing around with it, I have a little less confidence. Hoping what I don't know won't hurt me . . .
