Make youtube videos with content from users

Hi guys, I have a large community that tags me in their videos every day so I was thinking to make compilations with their video content.
The question is:
It's ok if I tell them to send videos to my email (if they want to see it in my video youtube channel?)

What if in future they report the video? Can I use the email that they send to me as proof to Youtube for not stealing content?
