So how does everyone do location pages for local service businesses? I usually have the service pages with mentions of the cities and service areas for each specific service then have a landing page for each specific location with content supporting all the services they do.

I find my stuff ranks well that way but I was curious if there was any better way to do this?

Ideally you need service pages for each individual service you offer and city pages which are unique and target the area's you operate in and want to rank for.

In your service pages you could link to some of your Popular areas you serve which will help to pass on link juice.

It's important that content is unique and try linking to local sites/resources from the city pages. For example if one of your city pages is new new and you are a DUI lawyer then write up some information about NY laws on DUI whilst linking out to a NY government page or something similar. This will help create relevance for Google to understand you are trying to rank in that area.

If you have registered offices in each location then make sure to get them verified and setup on Google my business and to ensure each page includes accurate NAP and that you embed a Google map of that address location. Build citations to these pages also.

OK I just wanted to make sure I wasn't missing anything. All pretty standard stuff.
