I don't think there's any set number, but in practice and from experience try for no more than 3-5 under the same ip.
In my own point of view, I think the LIMITATION of the number of domains in an IP depends on HOW BIG your SERVER is.

Sorry, no offense, but I don't think that's the answer OP is looking for,
in sake of safety why not spread your links to social bookmark sites, squidoo lenses, articles, etc.
Much safer than figuring out how many sites are safe when linked in the same IP
