this answer is a bit late in the day as your question was posted over a fortnight ago, but for future reference, what i'd do is go to the meeting and have your preliminary discussion about what keywords theyre targeting and why, which keywords theyre successful with and why, who their competitors are and why; you open up your laptop or go on their pc and open up notepad.
Create a list of the top 20 keywords theyre targeting based on what theyve told you (its pretty rare to find a local business who's targeting more than 10 never mind as many as 20) and then open up a browser and go to the google external keyword tool:

INSTEAD OF typing in that list of keywords youve just created, you type their website address in and press enter.
google will spew out a list of keywords that may or may not be what the prospect is targeting, but here's the thing, whilst youre waiting for the results to appear, you make sure you tell your prospect that youre going to show them EXACTLY what google thinks their website is about REGARDLESS of what they (your prospect) think their website is about.
explain how the columns and keywords in them work and then sit back and watch their mystification grow and grow as they ask out loud 'but i dont understand, why does google think THAT's what our site is about?'
you tell them that they've got a nice looking website (assuming it is) but their on page seo hasnt been done correctly (assuming it hasnt). You explain how TITLE and DESCRIPTION tags work. You compare the keywords in the list you created earlier with the keywords in the google results.
You show how some of the keywords theyre targeting don't even show up in the google search results. You might also want to show how some of the keywords they chose are really good because of the search volume, but how others are meaningless in terms of search volume (or whatever).
Either way, the questions keep coming. They want YOU to answer them and they'll keep on asking until somebody draws (that part of) the meeting to a close (it ought to be you) and afterwards. it generally ends with "so what do we do to change this? What do we do to get started??"
And thats where you need to have your smooth approach to the runway cued up because what youve got there is a client waiting for landing instructions ;-)
