I'm trying to understand and avoid keyword cannibalization throughout my site and I have a few questions.

If I link internally to post 1 from post 2 with the exact anchor I want to rank for post 1, then post 2 has the exact keyword within the content on that page. Will this cause keyword cannibalization?

Or should I link to post 1 with an anchor completely different from the keyword I'm trying to rank for post 2?

Also, do related post widgets affect cannibalization in posts? The keyword in headings of posts will appear in multiple posts if this is the case?

"Keyword cannibalization means that you have various blog posts or articles on your site that can rank for the same search query in Google." - Source.
It is for the page/post content. Not for internal linking.

Keyword cannibalization means that you have 2 or more pages trying to rank for the same keyword.

That will cause keyword cannibalization because google wouldn't know which page should be ranked for this specific keyword.

No this doesn't cause keyword cannibalization.

You can do the internal linking with the same anchor text that you wanna rank. That's how I do it.

As mentioned above, you can safely use the same anchor text on multiple links.

Google becomes more and more like what the governments wants you to see in search results.
Most websites and seo experts telling you how bad it is to do multiple domains and keyword cannibalization.....blablabla...

The big guys like Zilla, Hearst media and many many more laugh about us.
I would say try it, have a main site, then a smaller site (or landingpage with the same keywords for your services you offer) on separate domain , the content on the smaller site has same keywords, similar titles and content is little bit rewritten
to 20-30 % and then you should gain multiple serp listings. (with the time).

Not use the same niches who are dominated by the 16 sites who are dominating google worldwide.
