Does a bold keyword also affect seo? Like, if we bold our primary keyword in a content, will it set a more priority in the eyes of Google crawler?

This used to help but I’m not sure whether it’s that important anymore. From what I noticed with my content it doesn’t matter anymore.

It might be used for attracting in visitors, but I don't think it would do as much for search engine rankings.

No, wouldn't make your content rank higher. Using subheading tags would highlight your keyword to Google instead of making them bold. But abusing it would produce opposite results than expected.
