It depends, i;m not trying to be specific on bing.
I'm creating content to rank on all search engines, mainly for Google :)
So you need a little bit content, then you need some backlinks, some mentions from social media and the engine starts, usually you can find your page in search after 48h. But the main part is to index all articles, to keep readers interested, to scroll your pages etc...
 
New site's has only up to 20 articles, but building new articles daily and publishing max 1 per day, to get traction to make bot visit everyday.
One site has 500+ ( a lot of old content, from PAA testing etc...,)
The next older has about 100 articles.
It depends in niche i guess, you may cover niche in 50 good articles, then you need some tips/suggestions/tutorials and update articles every 3/6 month.

Do you find that publishing 1 article per day is best for not triggering AI content algo?

What about the domain? Is it expired domain? Do you build backlinks also?

Used only new domains, niche specific name etc...
But will try on old domain too soon, have several old with some traffic and backlinks, will remake to affiliate site.

No i publish one per day because it's better indexing for me, than publishing in bulk.
I think best is to have at least 10 articles and then launch a site and add 1 article per some random period of time.
Yes all the content is AI+ manual edit.

I try to add 2 articles per week. If i have time i setup more , but no more 1 article per day.

I don't use any bots, i have only created sitemap.xml and submitted to Google search console and bing search console.

Working on new site these days, need to expand operations a bit, because earnings so for not looking good :)
