My ranking have been fluctuating since the May 4th update. I thought they stabilized 2 weeks after the update announcement but I'm still seeing a lot of movement.

Google is changing its algorithms every day. It looks like your site dancing more after the may update.
But you have to keep an eye of your competitors as well. maybe their strategy affecting you.
