Some sites use it to reduce their bounce rate, but I honestly haven't experimented enough with it to tell you anything else.

You mean splitting articles up? Or article/search results pagination? If the latter, then don't link all the results or it'll generate tons of useless pages, just link the first 4 or 5 pages.
As for splitting articles up, it's mostly done to increase pageviews and ad exposure. I wouldn't artificially split articles into smaller content.
