I mean we're all energy after all? Infinite realities and possibilities? Would it not be possible to go back to a previous state? A previous save? Just like in a game?

It might be possible but I hope not, it would be great but every positive has a negative. Its the way the world works.

Just like humans. In one hand we could become something great and unlock the secrets of the universe, maybe become "gods" and in the other hand we could destroy ourselves and the universe if we advance far enough.

I think if we learned how to go back in time it would absolutely destroy us.

Perhaps you would like a show called Through The Wormhole With Morgan Freeman. I used to watch this show when it first came out, but I haven't had the time to catch up on the more recent episodes. Anyway, episode 3 in season 1 goes over if time travel is possible.

I kinda wish I could just go back in time with no recollection of now, but a firm understanding that I have to get my shit together.

And there are many different places I could go back to, but there's this one particular one that would probably make me one incredibly happy being.
