If you enrol on a frequent flyer programme like KLM elite then you have a better chance of getting an upgrade.
If you fly with somebody who is already booked in business/first then they can usually ask at the booking desk for their friend to sit beside them. If a plane is underbooked its at the booking attendants discretion to put you wherever they want.
I spent a tonne of money over the years flying business. The only advantage for me was I could get a nights sleep and arrive in my destination ready to work so it saved me a day. Apart from that the benefits are not worth the cost. Food is still as shit but you do get silverware instead of kiddies platic knife set !
