So I've been cranking out quality content in my niche (Dance Tutorials & Tik Tok Dance Tutorials) and I know their quality content because my watch time is always really good an my click thorough rate is good but 9 times out of 10, my content doesn't get pushed to the algorithm even though im nailing these two things. I've developed a video structure that made my other videos go viral and mimic the same style throughout but still nothing. I feel like the demand in my niche is not HIGH in contrast to other niches because even with other channels that have 1million subscribers is barely able to crack 10,000 views on YouTube so its not something im doing.

Is it possible for a niche to be too small & limited?

When it comes to niches, yes there are niches in which more YouTubers have their channels based around and also niches with lesser number of YouTuber's channels based around it. That is one of the various factors that makes the competition for ranking more difficult or less difficult (there are other factors too). You've mentioned that your watch time and CTR are good and these are 2 important factors of the many ranking factors. Are your videos well optimized ? The foll. may be helpful for you :-
I did read somewhere some useful information pertaining to your concern and I will share that here.
DISCLAIMER : For experts, the foll. information may not be useful, but the ONLY reason, I am sharing it is because OP has very clearly mentioned that he (or she) is "complete noob when it comes to youtube" and hence I am trying my best to help, so YouTube experts, kindly excuse me in this case.

You mentioned that you did the SEO part. OK, since it is a keyword thing, I hope you have covered the critical aspects to rank your video for that keyword, see below :-
Title, Description, Tags must all be optimized around the keyword.
One thing many people do not know and perhaps may not agree with is that Youtube transcribes every video on Youtube; therefore, if you include your keyword throughout the video, Youtube will more easily understand what the video is about and rank it higher.
TITLE : Be sure to include the keyword as far to the left as possible, because Youtube reads left to right as we do.
DESCRIPTION : Include variations of your keyword throughout the description
TAGS : When adding tags to your video, your first tag should be that target keyword. The rest of your tags should be variations of this keyword.

How old are the channels in your niche getting high number of views ?
