I'm making a really comprehensive directory, and I'm wondering if say I put a restaurant in there, would it be illegal for me to copy and paste what's on their website, or take pictures from another website(not necessarily the businesses official site) to put on my directory?

Yes, that is most definitely copyright infringement unless the stuff you were copying was explicitly under an open license (eg. creative commons). Otherwise to be legal you would have to get permission from the source sites. Whether you would actually get caught is another matter.

I agree with the rest, but I think Creative Commons is only free for personal use and not commercial ..? I may be wrong though, so CMIIW

The best free to use license IMO is MIT license..

If anyone has other thoughts on this, please share (in plain english..lol), this is one thing i would really like to know.

I run a travel site and everything is copy and pasted from the operators website. While it may be against copyright, they'll just be happy that someones out there promoting them.
I wouldn't worry too much.
