is copywriting dead?

For now, AI has turned copywriters into copy chiefs - you DIRECT the copy via prompts but the creation is still yours.

But I still think this will kill off most jobs. If you're not in the elite level, learn new skills that AI cannot replace eventually.

Inclined to agree with this. AI won't kill elite skilled people in most domains. I'd generally argue that AI is likely to eliminate more tech oriented tasks than human tasks, because technology by definition outmodes itself (new technology gets invented which subsumes the old tech/skillset). In this case, software engineering is far more under stress because automation is the end goal of a lot of software, and this is one of the final bosses remaining (automating the automators).

Copywriting, sales, and other highly 'human' domains which have existed for thousands of years likely still have life in them.
