In the scenario as explained by you, the person or company that receives the crypto from you, would not be able to know that it is from you. But, they can know that the sending address (of the crypto) is related to Coinbase. And Coinbase follows KYC, so incase of certain situations as required by law, Coinbase may reveal it's user (customer's) identity. Yes, I know people create stealth accounts, etc ... I am not referring to all that. I am referring to normal usage.

They are not going to give your information to everyone. But if you do something fishy, they can catch you.
