So I discovered that my pages/posts are still indexed but have all been removed from the sitemaps. I have deleted and resubmitted my sitemap GSC and updated my posts, but the problem Is still they. How do I get them back in the sitemaps? This happened after the core updates.

if you want to remove the indexed pages in google, you can use the GSC removal tool to remove the indexed in links in google.

it you want it back to your sitemaps, then just modify/edit your sitemap file.

I'm not planning to remove the URL completely, just want to get them back in the sitemaps

  1. If you DON'T want these URLs to be indexed, just wait
  2. If you DO WANT them both in the Google index and in the sitemap, you can update manually your sitemap.xml adding the missing entries

Nobody here understood your concern but I did because it is happening to me as well. I can see all the pages of my blog are indexed in Google but have been removed from Sitemap in GSC. I tried to resolve this problem but failed. I removed the sitemap and resubmitted it, I removed the plugin that I was using to generate the sitemap in XML format and reinstall it, I tried other plugins as well. I waited for a month but nothing worked for me. It looks like we can not control it, it's Google who has full control of it. Prolly it's a sign that our website is hit by Google updates.
