For example if they have the same search volume would it be better to target "sports car" or "sports cars"?

Would targeting "sports car" also improve seo for "sports cars" and not the other way around?

obviously using sports car/cars as an example only
 
optimize for the keyword with weaker competition (as according to YOUR OWN findings, not according to SEO tools).

Eventually, if you rank high enough for 1 of the forms of the keyword, google will most likely rank you high for the other form of the same keyword, so start with the easier version of it

Completely irrelevant. We are not in 2010 anymore.

Simply check if you have what is needed to rank for any of such keywords and if you have, you might end ranking for both. And simply use whatever is more natural for a top tier copy.
 
It's easy to understand, just type these queries into Google and look at the results, if they are the same, then it doesn't matter whether you add them or not. But most often, these are different results, without the letter "s" there may be results with pages of some services, conditionally, and if with "s" in the results there may be articles with lists of services. If we are talking about commercial queries.
 
If the targeted page is only about a specific car, you can use the "sports car" keyword as a target.

If the page is focused on various sports cars, you can choose "sports cars" as a targeted keyword.

But my opinion is, Using "sports cars" allows you to potentially catch users who are looking for information about various types of sports cars, rather than just a specific model.
 
You will start to see impressions whether you target one or the other.

I prefer to go after plural because it usually matches context of the website better. It's about multiple cars, not about a car.

If you're promoting a particular brand or model, you can use 'sports car' (singular). But if you're referring to many models or various types, use 'sports cars' (plural). The difference is simple: it depends on whether you're talking about one or multiple cars.
