Pretty much anything really big. G wants to provide the most relevant results which keeps them the most popular and even if you used an exploit to manipulate it they'd probably manually overturn it if/when they noticed.

google "high paying adsense keywords". Those are usually very competitive hence very hard to rank #1

I find this kind of information very valuable because I like to find Mom n Pop sites that rate for crazy big keywords and try to get backlinks in the places they are getting theirs at

Highly disagree. As an example if you ranked a beastiality porn site for the number one result of Google I guarantee they would manually remove that.
