After reading this post which discuss how Google transfers 100% of PageRank through 301 redirect.
After I read this i shortened all my category pages using bitly which utilizes 301 server side redirect which were linked from the homepage from the menu.
Then request index the home page, couple of days after this, after Google cached the new version. My pageviews jumped from 2K to 4k and all the category pages have drastic SERP improvements for my main keywords.

Did you double your traffic the next day after you redirected to your niche site via an expired domain 301?

No, i only shortened the category pages linked from the homepage using bitly, and that way all the link equity of the homepage passed to the inner pages (Categories) in my case.

Please forgive me that my English is not very good, I may not understand you clearly.
Do you mean that by redirecting the homepage 301 of the expired domain name to the category page (pillar page) of your niche website, the category page ranking of the niche website has been greatly improved?
PS: Directly use a registrar, such as godaddy, to point the expired domain name to the DNS of your niche website instead of performing a 301 redirect through a .htacess file, right?

thank you for your sharing. At the same time, how much time do you see a significant improvement after your 301 redirect? 2 weeks or 1 month, or longer?...

That's how I also understand it, awaiting the example to be sure then I can run a test on a few domains to see if it moves the serps

https://bhwsample.blogspot.com/ now check every link in the menu and hover over it and check it's destination and you understand the technique. You can leverage this and use it with any link shortener that utilizes 301 server-side redirect like tinyurl, bitly is.gd a few to name
 
I've been discussing this with other people, and it doesn't seem logical. There's no logical explanation of why it should double your traffic.

Do you have any images from analytics that prove this?
