Advanced JPEG Compressor is a great bit of software.
can do one image or a whole directory.
and can do them in various ways

Adobe Fireworks / Adobe Photoshop can compress / optimize images. (I think)

It's a free online one, they have a FireFox plugin or you can use a Bookmarlet also. Whatever page you are on, click the FF button and it will submit every image on your page, compress them, tell you the % savings and give you a .Zip of all the files.

There is no noticeable loss in quality, one of the guys in the Yahoo Web Performance team is behind it.
