How about a querystring to the URL?
In the email put a personal link something like http://yourdomain.com/?xxxxxxxxxxxxxxxx where xxxxxxxxxxx is a unique identifier to the email. Something like a MD5 hash of the email or something?
It all depends on how you send out the email.

I believe you want the visitor to opt in before you redirect them to the offer. So, why not create a landing page and on successful submission of opt in, send the visitor to the offer page?
