I don't get why everywhere is recommend making an e-commerce shop?

Can't you dropship without an e-commerce shop? At least in Amazon's case, the customer is essentially paying you through amazon's system and you are fulfilling the order.

So why would you need a separate website, especially when amazon doesn't allow upsells?

Well a shop gives you your own control and you don't have to worry about paying amazon fee's plus your not restricted on what you want to sell. At least that's why I think ppl own ecommerce shops. I have one myself.

More control and instant payments pretty much. I had a site I built and it earned a little more than $1k profit in the first week. Pretty decent, and since I was getting paid directly to my PayPal account I could use the funds to build my business faster then if I had to wait xx days to be paid. So there's a lot of pluses. And you can give customers deals, raise/lower the prices for events, etc. There's a lot of ways to increase conversions once you get the traffic.

The down side is processing payments. If PayPal puts a hold on funds that could instantly stop your cash flow (that's what happened to me). And getting a merchant account so you can process your own payments is no cake walk.

How much did you have to spend on advertising to get that much business in one week?

With the power of SEO and PPC our stores gets over a couple thousand customers per day. The idea is to build a brand and not quick money with Amazon.

Well, I will be studying SEO so that I can learn these tactics. I once had a site that never got 1 sale.. Devastating...

The issue is a matter of control. What happens if amazon decides to ban your affiliate account one day because they don't like the way you're sending traffic? See, with your own website you play by your rules - you decide what you ultimately want to do and have full control over it.
