I cannot find good backend courses

On the front end, I have already found an instructor that I really like (John Smilga), but on the backend. Not only PHP, but all the languages Java, NodeJs ... It's really hard to find good projects based courses. I can pay higher price. But, the intructors have to be experienced, the projects have to be from start to the end. The designs have to good and they have to explain everything simply because I dont want to waste my time to learn from messy projects, shitty design.

There's thousands of experienced developers in the world can do that, why dont they follow that style of teaching. I'm sure there's ton demand for that.
