Do I use HTTP or HTTPS or SOCKS5 (on a mobile proxy) for multiple accounts on the Instagram app, I assume Socks5?

only residential ip work ,and both socks5 https all support.

There isnt much difference, but it is always in my opinion better to use socks5.

you can use a mobile proxys, make sure its the same
country as the account .
