I have the opportunity to pick up a domain that for a very popular food chain. The domain has the name of the company then coupons in it. So for example if it were for ihop it would be ihopcouponsdotcom. My question is how would you monetize it?

Make youtube video related ur niche ! Try with safe things

Monetize with Adsense and put a Wordpress Coupon theme on it. Youtube and other social media would be a good way to drive traffic to it.

Be careful doing a whole lot so you dont draw their attention they can legally take the name since it is a trademark.

Adsense. maybe you can work something out with the food chain itself, contact them when you have lots of traffic.
