How to track offer completions?

So I just signed on as a direct affiliate with a company. They have CPA offers but they aren't really a CPA company in the sense that Peerfly or Maxbounty is. I'm basically working with the company directly without a middle man CPA company like Peerfly or Maxbounty. Since they aren't a CPA company their stats system is very basic. It will show me how many clicks their offer received and how many conversions I have but I don't get any other information. I don't get the users IP address, the time the filled out the offer, their email address or anything. I'm utilizing a GPT site to run this offer but I have no real way of verifying who did what. I'm trying to get this set up to where I can get an ip address or email address but I guess I'm going to need some sort of third party system to do that. Can anyone provide some insight on this? I don't want to pay hundreds of dollars a month in hasoffers or other tracking software like that. I need something free or cheap. As long as I can get an email or IP address I'll be golden. I know I could just ask for the GTP member to submit the writing on the last page of the offer or something but the problem is this offer is good every 24 hours so I'm going to hire the same 50-100 people to do this offer every 24 hours. If all I ask for is last page wording they could all just keep submitting that same information everyday.

As far as I know, if the network does not provide any kind of postback, there is no way to get that info.

Nearly impossible to run a GPT site without the network providing a postback.

This was the companies response to me:

We used to place third-party tracking pixels in our end pages, but we no longer due to tighten our measures on fraud. Now, we only offer Rest API and server to server tracking. And again, unfortunately, we don?t/can?t pass back IP or any personal identifiable information.

I have no idea what Rest API is or how I would go about doing server to server tracking. Anyone have any ideas? I've emailed a few of the big tracking companies that charge $30 a month or so to track CPA conversions and they all said that I need access to the landing page and thank you page to track conversions. The offer is 100% hosted on the companies end so I have no access to that stuff. There has to be a solution out there somewhere. I'm a newb with this stuff but the two things I can think of are:

1. iFrame the offer on a domain I buy. Would I be able to track that way or would I still need access to landing page and thank you page?

2. Just have my GPT users take a screenshot of the thank you page next to their windows or mac clock with the date and time. I would want the date and time because these offers can be filled out by the same user every 24 hours so I don't want them sending the screenshot of the original thank you page over and over again. My only concern with this is maybe they could just Photoshop the image?

No idea on the first.

On the 2nd, I am sure you don't need me to tell you that this will discourage MANY users to complete offers and it would also turn into a nightmare for you to manage, validate points and prevent frauds.

There is a reason why most reputable incentive CPA have their own APIs for GPT and points sites.

Your best bet looks Adscendmedia.
They have an advance point system. 2 PHP files very simple to configure and implement.
