How to track conversions by email address?

I'd like to sell affiliate products on my website. I'll offer an incentive for visitors to join my email list, after which they get redirected to my affiliate network link.

How can I track which email addresses complete the purchase? I'd like to send a follow up email to those who did not purchase.
