Sometimes I want to share some stuff with my team or certain people, the easiest way is to create open links of the file ( I don't have to invite them one by one).

I've noticed google will index the file if I do that, therefore searchable which is not good since it might contain some information that id rather only my team see.
see the results of this query in Google: "Data site:docs.google.com inurl:spreadsheets"

is there any way I can stop google from indexing my spreadsheets & google docs?

Does anyone have an answer for this? any ideas?

You can't especially if they're on Google sheets. If the spreadsheets are on your site, you can no-index them via the robots.txt file.

Google said that it does not technically read users files, But Though it can identify clusters of data that might suggest a violation, the system does not pull meaning from the content. So if you're using site's mean try Yoast SEO to unread your page or try robot.txt file to block google crawlers.

so why don't you just share it among your group?

Well, don't share it to everyone and keep the view private. No one can see it them and it would not be indexed.
