How to start with Google Ad Manager?

Google ad manager is an ad server. Its a place to manage all your ad inventory from direct buys and other 3rd party networks. What are you wanting to use it for?

I want to display ads on my website using Google Ad Manager.

Google ad manager itself isn't an ad network. Its a way of managing ad inventory. Are you accepted by any ad networks that support google ad manager? If not, you can't display any ads on your website. You cannot directly supply ads via google ad manager.

Each of the sites are using tens if not hundreds of networks. If you do to domain.com/ads.txt you can see a list of ad networks the site is using.

But what ad management system are they using or can you please suggest me a good ad management system for my online gaming site?

A lot of them seem to use DFP/Google ad manager but that will require a lot of impressions a month to setup. Why not just use a normal ad network like AdSense?

Adsense sucks. I have been using Adsense since last 10 years. But recently I am getting very very poor revenue as compare to previous time. Most importantly they deducted huge amount of money as invalid clicks. I got only $50 last month after deduction of invalid clicks, whereas I am earning average of $50 per days for Ezoic.
I have something like 150000-200000 monthly pageview and currently I am using Ezoic. Initially I got happy seeing daily earning on their system. But since few days earning is again going down.
Thats why I am looking for Ezoic like other ad management system, which can give me good earning based on my traffic.

You could try the other companies similar to Ezoic like mediavine and adthrive.
With those monthly page views you could check out HooliganMedia, you might be able to get a header bidding setup. They have a BST here on BHW and I'll tag @se900se, he can direct you with that.

Is HooliganMedia google certified and how is their CPM?

I don't know about an official "Google partnered badge" but they are partnered with them. CPM is good but it depends on the quality of your traffic and the niche.

Google Ad Manager is an ad server and powerful analytics and reporting tool, it's not an ad network like @Jammy0308 mentioned above. I assume you have AdSense if you got approval, GAM & AdSense have a seamless connection via Admin > Linked Accounts. Put your AdSense id there and you're good to go. All other networks set up slightly differently.
I suggest hiring an expert or doing deep research before you use GAM.
