Definitely start with a subject you know a lot about and have an interest in. Not only will it be easier but also more enjoyable.
If you know anyone who would be interested in you writing some content, you could always get some practice by offering some work for free.
edX may also have some useful courses, and in addition to Upwork, Fiverr may be a place you can get some paid work.
If you want some feedback, I've had a good experience in this forum so far, so it could be a good place to test the waters with something you have written.

read an article. open a notepad. write the article out from memory. thats a start - learn by imitation.
once you mastered that, read 3 articles on the same topic, make notes whilst reading each one. Write your own article using your memory, and the notes.

I was thinking to start writing content myself but I see many tools now for generate automatically with AI so I realize it's not worth the manual work in 2022.

Do a lot more research than writing. Find out what the marketing needs. Pick something you have a little bit of interest in so when things get hard (they will), you'll have an easier time pushing through. You can always use a tool like jasper to write everything for you

Content writing is no longer a challenge now that relevant AI tools are available in abundance. Proofread the AI generated written content (correct and edit), ensure it is plagiarism-free and then the written content is good enough to be published.

For the current SEO landscape, you're correct. You don't need to write your own unless you enjoy writing. Just get an AI writer, generate the content, proof read the output & check for misinformation or grammar issues.
Though, Google will eventually be able to detect this. They can't now obviously, but that's coming within the next year or so.
