how to SEO optimize for an ecommerce store ?

most ecommerce stores have only products without

much actual SEO optimization using content , correct me if im wrong .

so is building backlinks the only way to optimize a ecommerce store ?

if i m not creating content ( text ) on my site
 
You can add a good description under that product and you are good to go. It's hard to build backlinks to each product if your store has thousands of products. Instead, it's better to build backlinks to the homepage to increase the overall authority.
or you can also build links for categories too.
 
backlinks to each product are a nightmare if you have more than 100 products, as @sarfrazk9 mentioned, by item just improve the title, create bullet point details (amazon way) an excellent description and put the backlinks to the home page
 
This would depend on the strategy you're going for.

In the past I've found content on product pages to be very overlooked. Targeting your product page to rank for your target keywords can be very beneficial in terms of conversions.

Research your product keywords, check your competitors, create some useful content.

Extending product descriptions and adding further content has helped me scale multiple stagnant sites and has been working very well for me.
 
If you’re using Woocommerce, create blog/posts for categories with links to products. Also add images, a YouTube video and a couple of outgoing links. I then added a few backlinks to the post.

I did this a few months ago using AI for the post content (600 words) and edited it. I used RankMath to assist.
After a few weeks it helped a few products overtake my client’s competitors.
 
You have to do it all.

Add content and build links to homepage (most) categories (some) products (if it needs a little extra boost).

Create blogs to other websites with a attractive article and build your product link in the articles. It will increase your traffic and sales
