best way to get more conversions and scale ?

You need to slowly grow your quality score and your metrics in order to really grow. Google (or Bing Ads) won't feed you a ton more impressions until you show them that people are loving your ads and clicking them at a higher rate than your average nearest competition. This means having relevant and sticky landing pages, having good ads that you constantly improve and rotate for split testing, and weeding out negative keywords aggressively. You also will want to constantly and slower be growing your keyword base, while moving "winning" keywords into exact match as benefits you. Obviously budget and other things come into play once nothing else is holding you back. I would suggest reading a couple advanced books on the subject and be sure you're brushed up on how to properly optimize a campaign. You'll save a LOT of money in the long run vs running it poorly... you'll be glad you did.

Keep hunting more keywords (Target options) and different angels or maybe try to expand to more countries?

You need to have the correct set up, meaning you need to be able to know what keyword is the one that is bringing the conversions, if you are selling your own product then Google Analytics will help you to do this otherwise you need something like Voluum, these tools will allow you to identify what keywords are bringing the conversions, what is the acquisition cost and then you can search combinations from those keywords and expand your media buying efforts.

1) Budget: First thing you need to check is your impression share
2) Delivery type: If a campaign is profitable you want to receive as many of the available impressions and clicks as possible
3) Geographic expansion
4) Language targeting
5) CTR improvement
