its best to use different but you can easily create 2 accounts under 1 email /.

Yes but, we all have lost our Gmails or other mail accounts in past.
You can create up to 50 Youtube channels associated with one Gmail account, but, what if you lost access to that Gmail?
That is the problem, so it's safer to go 1:1

You can go both ways
1 YT account with different channels each for a niche or you can use different gmails for each channel. If I would be doing this I would use a single account to get every mail on a single gmail. But its not a problem in any case.
