Hello, my website use rankmath, and I notice that It's auto generation Schema Markup LocalBusiness.
How i cound over write these information?

Check if under Pages > Schema Type you have LocalBusiness selected.

On the other hand, if you have a paid license, I highly advice you to contact RM support with this question. They usually reply quick.
