This is a food blog that's been running for over a year now. Can you guys tell me how can I improve its earnings? Traffic is mainly from the US, the UK and Canada.

I tried Ezoic but got rejected by Google Ad Manager.

Also, how much can I expect to earn with such traffic and niche?

It's rare for Google ADX to reject a website that's already on Adsense because it's less strict compared to Adsense.
From your screenshot shared your CPC is kind of low for the tier 1 countries that you mentioned, another thing that is low is the CTR, it means you're getting too little clicks. You need to increase to an average of 5% CTR. That should more than double the number of clicks you get. You can do this by increasing the number of ad units on your page and position them in areas where they could be seen.

Finally, consider throwing in some affiliate links in your blog posts.
 
Your only focus should be to increase traffic. Like if you make this traffic 1 times, network will run to accept you and your earnings will also increase 10 times. Focus should always be learning and not on earning.
 
The cpc for this niche is less. You should write on related topics which have high cpc. It can surely boost the earnings for an adsense blog.

with that much traffic it won't increase your earnings that much, even if you switch to any ad network

just keep produce content, get some quality backlinks regularly, make your site bigger and get more keywords to rank so you get more traffic and earn more
