I was wondering how people get away with hosting tv shows, movies, and other things and having them up for download on their own servers. How do you make this not catch up with you?

Well they host it with someone who doesn't give a fuck ;) simple as that

Do a whois.sc lookup on major torrent sites and see where they are hosting :)

off shore hosting? i dont know any but would be interested...

I've seen a few of those sites hosted in China. China couldn't care less about our laws. Even though the sites have been in english, the hosting providers I've visited are not. I think there must be some out there which are translated. I wonder the government censorship there, plays into the equation.

actually anyone can run a site that contains copyrighted material if they adhere to local copyright laws - the actual jurisdiction is the main sticking point but the US DMCA laws seem dominant and US courts seem to usually assert jurisdiction, which matters if the people involved in running the site are US citizens.
As long as a web site follows the DMCA laws regarding "Safe Harbor", they are immune from prosecution for any copyrights infringing on behalf of its users. These regulations include things like honoring takedown notices, not promoting or "inciting" copyright infringement by users, and things like that.
